Guacamole.. how to do right!

What is your go to breakfast? Mine is eggs and avocado. Eggs are flexible and can be cooked so many different ways. When you are in rush, just break them on a pan with some butter.. sprinkle some salt and pepper, you are done! I eat eggs this way with avocado and may be some home made siracha.


However, making my son eat avocado is not straight forward. He won’t eat avocado generally, but loves the guacamole from Chipotle. That is the only guacamole he likes to eat as well! It is good for me because Chipotle’s guacamole is also the easiest to replicate! Now, guacamole can be intimidating for some. It first starts with buying avocados. Once ripe, avocados get spoilt fairly quickly on the kitchen counter. So it gets tricky buying them. One simple trick is to buy them when they are still not ripe. Let them sit on the counter and ripen to your liking. When close, move them to refrigerator. They will easily last you 2-3 weeks without getting spoiled. This way, you have ready avocados in your fridge when you need them.


Then, the guacamole is super simple to do! If you want to replicate chipotle's, just mash couple avocados with juice from 1/2 to 1 lime. Sprinkle salt to your liking. When done, mix in chopped cilantro and finely chopped onions. Mix well, adjust for salt and serve!


Today, it's rainy and lazy day! Our breakfast was easy cooked pasture raised eggs.. with a very generous serving of guacamole! Just perfect!!! Now, make a nice hot cup of tea and take a nap!
